- Retiramos las pechugas, dejamos que enfríen un poco y las picamos. Dejamos la salsa reducir un poco y cuando esté algo más espesa, añadimos los 4 huevos y seguimos cocinando removiendo constantemente.
- Cuando espese un poco, dejamos enfriar y mezclamos con el pollo.
- Montamos la pastela en un molde desmontable cubierto con papel de horno. Pintamos con mantequilla derretida las hojas de pasta y vamos poniendo dos para el fondo. Encima el pollo mezclado con la salsa. Encima otra hoja de pasta. Después la pasta de almendras y, por último, otras dos hojas de pasta filo con mantequilla para cerrar.
- Damos forma y pintamos con huevo.
- Metemos al horno unos 30 minutos a 180 grados (hasta que esté dorada).
- Desmoldamos y espolvoreamos de azúcar glasé y canela.
