- 4 solomillos o pechugas pequeñas/medianas de pollo
- 3 rebanadas pan tostado (el mío de espelta)
- 50-60 gr brotes tiernos
- 1 lechuga pequeña
- al gusto Tomates cherry
- Para la salsa:
- 1 yogur natural
- 3-4 anchoas
- 1/2 diente ajo
- 3 cucharadas aceite
- 1 cucharada zumo de limón
- Queso parmesano (recién rallado aporta más sabor)

- Primero vamos a dejar las pechugas haciéndose a fuego medio/alto a la plancha. Se pueden hornear igual que el pan, pero esto requeriría más tiempo. Han de quedar doradas.

- Mientras pon el pan a la tostadora que quede crujiente pero no quemado. Atent@s. Cortamos a cuadraditos. Reservar.

- Para la salsa, podemos usar un mortero para triturar el ajo junto a las anchoas en su aceite. A mi me gusta con trocitos, así que lo he picado muy pequeño. Agregar el yogur, el limón y el aceite. Por último, agregar el parmesano. Mezclar bien y ya la tenemos lista.


- En un bol pondremos la lechuga y la ensalada limpia y cortada pequeña/mediana, el pan tostado y la pechuga cortadita. Por encima, esparcir la salsa y algo más de parmesano rallado. A disfrutar!
