- Para la base
- 700 gr pechuga CONGELADA (pieza entera)
- 40 gr mozzarella rallada
- 30 gr parmesano rallado
- 1 cucharada hierbas aromáticas

- 5-6 rodajas mozzarella
- Para la cobertura
- Salsa de tomate ya preparada
- 1 tomate
- Pimiento rojo
- Pimiento amarillo
- 1 chalota

- En primer lugar, congelaremos las pechugas durante 24h. Al día siguiente, las sacaremos del congelador y las rallaremos (como si fuera un trozo de queso, igual. Intenté picarlas en la Mambo y fue imposible....así que no lo intentéis pues es como meter piedras 😣). A medida que vamos rallando la pechuga iremos obteniendo pequeños hilos de pechuga. Cuando ya tenemos la pechuga rallada, añadimos el huevo, el queso, el ajo picado, la sal al gusto, las hierbas y amasamos (esta parte duele un poco..)



- Una vez tenemos una masa similar a la de las albóndigas, la extendemos en un molde apto para horno. Haremos una capa finita, la aplastaremos con una cuchara y la compactaremos con las manos. Colocamos las rodajas de mozzarella y encima haremos otra capa de "masa" extendiéndola con la cuchara y compactándola con las manos. Metemos al horno a 200º (previamente pre-calentado 15 minutos) durante 20 minutos.



- Mientras se cocina la base de la quiche, cortaremos el resto de ingredientes. Sacamos el molde del horno y colocamos sobre una rejilla. Con cuidado de no quemarnos, extendemos 2-3 cucharadas de salsa de tomate ya preparada (yo he utilizado la de tomate y cebolla del Lidl), espolvoreamos un poco de queso mozzarella rallado y distribuimos el resto de ingredientes por toda la superficie.



- Por último, espolvoreamos unas pocas semillas de sésamo por encima y metemos al horno otros 20 minutos a 200º. Sacamos el molde del horno, colocamos sobre una rejilla y dejamos enfriar otros 10 minutos. Sacamos del molde y emplatamos.
