- 1 cucharadita sal
- 2 pechugas de pollo

- Hacemos una bola grande la tapamos con un paño de cocina y la dejamos reposar unos 20 minutos, después la partimos en dos partes y con un rodillo(ten harina para ir echando al rodillo)extendemos la masa y ponemos una de ellas en una bandeja con papel de horno la otra la reservamos
- Ponemos a cocer los huevos y a escurrir los piquillos las pechugas de pollo las hacemos a la plancha con sal y pimienta y cuando estén frías las cortamos a trocitos
- Picamos la cebolla finita y el pimiento a cuadraditos y sofreímos en un poco de aceite cuando esté pochado añadimos el tomate rallado y rectificamos de sal lo tenemos unos 10 minutos que se haga bien
- Precalentamos el horno a 180° y empezamos a rellenar la empanada, primero el sofrito de tomate y pimiento el pollo a trocitos los huevos también a trozos pequeños y las tiras de piquillo
- Cubrimos con la otra parte de la masa de empanada la vamos cerrando por los bordes y presionamos con un tenedor que se cierre bien, le hacemos un agujero en el centro y por último con una brocha de cocina la pintamos con huevo batido, metemos al horno 40, 45 minutos hasta que esté dorada y lista, a comer!!
